7. Transfer the the Topfen-cream mixture into a piping bag without a tip and snip the opening so that the hole is about 1 cm in diameter. Pipe two or three quenelles of the Topfen-cream mixture on top of the raspberry sauce on each plate.
8. More raspberry sauce should be drizzled over the quenelles.
9. If desired, freshen it up with mint leaves. And don’t forget to use the reserved whole raspberries as the pièce de résistance.
10. Refrigerate briefly until ready to serve. Then serve and enjoy.
